BAKG 13013 - Baking I Credit Hours: 3
This course is an introduction to the theory and technique of baking and pastry arts. Basic concepts, units of measure, tools and materials, techniques and formulas are included. Discussions and demonstrations cover basic baking to advanced techniques. Breads, sweet doughs, choux paste, pies, and mousses are also covered.
